Is MotoGP's growth being stunted by star riders like Alex Marquez regularly getting injured?

Yes because alex was trending in the right direction last year and although he got off to a slow start this season, he was starting to gain momentum and then Boom! the crash happened.

I feel like the violent nature of some of the crashes that occur in MotoGP is one of the reasons some fans may be turned away from the sport.

For sure, a lot of casual fans are often looking out for the big names and if they are always injured, the fans will quickly lose interest!

It definitely does make the sport harder to follow as a casual fan when the more known names aren't racing! That's a worrying crash for Alex too considering his rocky return last weekend!

It certainly does not help the casual fan develop an interest in MotoGP when teams often have to field replacement riders who are not competitive enough. But motorcycle racing is very dangerous, and the riders put their bodies on the line every time they go on the circuit (even when they have only recently returned from an injury, like Alex Marquez has).
